Clam Chowder

10 oz. can baby clams (I like the Crown Prince brand because it's very low in salt, and I can use sea salt, which doesn't make me puff up with water retention like "other" salt does)
1 cup cream (preferably grass-fed)
1/2 cup whole milk (non-homogenized, preferably grass-fed)
2 - 3 small red potatoes, chopped)
garlic or diced red onions (optional)
2 Tbsp. grease from uncured bacon
(2 - 3 tsp. sea salt, only if using low sodium clams)

Put bacon grease in pan & heat. Add chopped potatoes and sautee for 3 - 5 minutes. Pour in clams, including the liquid. Add sea salt if using low sodium clams. Heat to boiling, then reduce heat and simmer until potatoes are tender. Add milk and cream and heat to desired temperature. Enjoy!
